New Nordic Cuisine Symposium

Food and ’the meal’ is an important part of our identity and the New Nordic Cuisine Symposium is an initiative, which focuses on developing the Nordic Kitchen as a vital and attractive kitchen. The purpose of the New Nordic Cuisine Symposium is to utilize and develop the various local potentials and seriously relate to taste, traditional livestock, health, traditions and new experiments.
A new ambitious Nordic Kitchen will widen the potential for innovation and experience for the food processing industries.

However, the initiative rises from the kitchen and at the symposium a manifest is made public for a New Nordic Cuisine, worked out by leading Nordic chefs.

The Manifest will be the subject for further discussion among chefs, opinionleaders within the gastronomic and the political field, the Nordic Gene Banks and the food industry. The topic will evolve around the potential for a vitalization of the Nordic kitchen. During the symposium all participants will get a chance to taste the various potentials of the Nordic kitchen – all prepared by the delegation of Nordic chefs behind the Manifest.

The New Nordic Cuisine symposium will primarily be in Danish,
Swedish or Norwegian.
